Founded in 2010, Brunch & Cake is Barcelona’s best-known brunch concept, with our locations ranked as the city’s #1 breakfast #1 cupcake shopsby Foursquare users.
Our group are pioneers in creating homemade and innovative brunch dishes, bread products, desserts, sandwiches, salads, vegan bowls and other healthy items as well as smoothies and specialty coffee drinks.
We are looking for an executive chef for our Dubailocation –our first establishment outside of Barcelona, set to open in 2019–that will be our flagship for the Middle East and center for the development of new concepts (charcoal grill/oven, wood-firedpizzas, mocktails, etc.).
AREAS OF RESPONSABILITY
Responsible for the culinary direction and operational kitchen management of our Dubai location.
Service &quality control: oversee and ensure the quality, consistency and accuracy of dish preparations and presentations.
Product development: development of recipes, elaborations and technical sheets in collaboration with Brunch & Cake headquarters in Barcelona.
Staff: selection and training of kitchen staff; planning schedules, vacations, payments, overtime, documentation, etc. in collaboration with back office
.Equipment: oversee the correct operation and maintenanceof equipment and facilities.
Production & efficiency: optimization of processes, controlling food cost ratios, maximizing production, minimizing wastage, etc.•Purchasing & inventory: coordination with suppliers, purchasing and inventory controls.•Food safety: ensure compliance with food safety regulations, food handling,and controls(HACCP, records, checklists, cleaning, etc.).•Liaison with HQ: coordination with Barcelona headquarters with regard to new menus, training, procedures, etc.
•Education:culinary or hospitality management degree, food handling and HACCP training
•Knowledge: modern cooking techniques, vacuum cooking, pastry making, baking, vegan & healthy cooking, Halal cuisine,French cooking, catering, worker safety, food safety(HACCP), food labeling, restaurant finance
•Experience: 3–5 years of experience as head chef
•Skills & personality: teamwork and management, skilled as a leader, works well under pressure, organized, results-oriented, demanding and determined.
•Languages: fluent English, Spanish and Arabic a plus
