About the Role:
An opportunity has arisen for a Chef De Cuisine to join culinary department in Jumeirah Port Soller Hotel & Spa.
We are looking for a candidate with proven experience in fusion cuisine, in Asian or Nikkei Restaurants.
Purpose:
To assist the Executive Chef with the smooth day-to-day running of all Food Outlets. Supporting the Executive Chef and/or Executive Sous Chef in the preparation of Menus to meet with market needs. To ensure that the Standards expected are met and exceeded at all times.
MAIN DUTIES
Assisting the Executive Chef in writing standard recipes which allow the restaurant to run at an acceptable food cost.
Assisting Executive Chef in minimising payroll costs by maximising productivity and scheduling employees
Monitoring kitchen operation costs and take corrective action where necessary to reduce expenses
Assisting Executive Chef in developing menus, buffets and ‘specials’ which to meet needs of customers.
Assisting updating the relevant section/s of the Departmental Operations Manual.
Using locally and seasonally available products in menus and ‘specials’.
Checking all stores (ordered previous day) are received and are issued to each party.
Checking and ensure highest quality and freshness of food/product.
Checking all fridges, mise en place at each station at beginning and end of each shift/service including quality of stocks, etc and to ensure a consistent quality of MEP
Checking fridges and storage areas to make sure previous day's leftovers are being used in the correct way.
Preparing and submit the purchase order for the kitchen.
Checking all preparation is going correctly following standard recipes and sizes, and that meals are prepared correctly.
Supervising preparation of operating equipment and that all ions for china etc are given to Stewarding.
During service periods, to call orders to kitchen brigade, issue food to waiters, checking everything before it leaves the kitchen and make sure it is of the requested standard.
Instructing and demonstrating all new dishes to staff.
Reporting to Executive Chef on daily running of the kitchen
Ensuring adherence to manufacturers’ instructions of safe use of all equipment and understand any risks involved of operating machinery and other equipment.
Informing Superior when any problems with your scheduled working hours, and when leaving.
To liaise with relevant HOD’s and Managers concerning any operational needs the Outlets might need or have.
Qualifications - External
About you:
The ideal candidate for this position will have the following experience and qualifications:

Excellent level of English
Friendly, approachable and professional
Demonstrates excellent supervisory and leadership skill
Good working knowledge of Microsoft Office
Works well under pressure
Demonstrates flexibility in working according to the needs of the business
Excellent customer care skills
Qualifications: Essential-Advance Food and Hygiene Training
Experience: Previous experience at Kitchen Management level
